Angus has lived and worked in the hospitality industry in France for the last 20 years. He has worked in the private sector and for the luxury travel group Orient Express as a chef and guide, he brings a wealth of local knowledge. Each day Angus will take you on a gastronomic adventure, sharing his hidden secrets, and meeting local friends who are the wine makers and chefs of the region.
The Languedoc is the world’s largest wine growing region. To date fifty-six different grape varieties are planted. It has the most incredible terroir', making each vineyard different in its wine making style and technique. This is the most varied of all wine producing regions in France. Unfortunately, in the past it has suffered from a reputation of quantity over quality. Those days are long behind it, with a new breed of wine producers, making Bio dynamic and organic wines. If you tell us the styles of wine that you like, Angus will try to find the right winemaker for you to discover.
We can offer two, one star Michelin Rated Chefs. For private chef classes, a minimum number of six people is required. The Chefs are Simon Scott of Bistro Saveur, Castres (only available on Saturdays ) and Jean Marc Boyer of le Puits de Tresor, Lastours .This proves to be a truly amazing opportunity to cook with a world class chef.
We have put together a fantastic itinerary, for those wanting to try all the gastronomic delights from this region. We have a series of cultural activities in which you can partake, whilst enjoying your stay at Château Terre Blanche. There are the fortified villages of the region which you can explore, with many holding medieval themed events over the summer months. There are many Abbeys and Chateaux spread throughout the Languedoc Region to explore. Prehistoric caves and artwork are worthy of a visit. We can accommodate all tastes and desires when planning your stay with us.
James McDonald is a historian and writer and holds a number of professional qualifications, an MA from Oxford University and an MSc from Sussex University. An author of several books and recently published an annotated English translation of Voltaire's writings on the Cathars. This tour is focused on the Cathars, visiting Cathar Castles and other sites with strong Cathar associations. Covering all aspects of Cathar history including their origins, their beliefs, the Albigensian Crusade, medieval siege warfare and the first papal Inquisition set up to eliminate the last vestiges of Catharism in the Languedoc. In collaboration with Michelin stared Chef Jean Marc Boyer, a native of Languedoc with a reputation for innovation, we have devised a culinary experience offering a total immersion in the cuisine and culture of the land of the Cathars. On this unique tour, your lunch and dinner menus will be created by Jean Marc using locally sourced seasonal produce and offering guests the opportunity to visit the best markets and wine makers in the region. At Château Terre Blanche, each day will bring new and exciting offerings from Jean Marc as he creates a menu worthy of his Michelin star, to be lovingly prepared by our resident chef.
Exploring region of Languedoc-Roussillon is one of the last hidden gems of France. It has something for everyone. Stunning Mediterranean coastline which stretches from the Rhone to the Pyrenees. Languedoc Roussillon has all manner of scenic drives that take you through all sorts of different Landscapes. Inland from the coast, you’ll find an unspoilt landscape dotted with sleepy villages, vineyards & river gorges. The region's varied and rugged terrain means there are many 'natural' sights.
